Delightful Almond Pastry: Moroccan Mhencha

The Moroccan mhencha is a traditional dessert that graces festive tables, known for its elegant spiral shape and rich flavor that combines almonds, orange blossom water, and honey. While often reserved for special occasions, it can easily be made at home with straightforward steps that yield results comparable to those found in confectionery shops.

Ingredients

To prepare mhencha, you will need 500 grams of blanched almond flour, 250 grams of powdered sugar, a teaspoon of cinnamon, two tablespoons of melted butter, two tablespoons of orange blossom water, and some pastry sheets. Additional melted butter is required for brushing the pastry, and for decoration, you can use warm honey and sliced almonds or sesame seeds if desired.

Preparation Method

Begin by mixing the almond flour, sugar, and cinnamon in a bowl. Then, add the melted butter and orange blossom water, kneading the mixture until it forms a smooth and pliable dough. Cut the pastry sheets into long strips and brush each with melted butter. Spread a portion of the almond filling along each strip, rolling it tightly into a long cylinder. Form this cylinder into a spiral and place it on a buttered baking tray. Brush the surface with more melted butter, then bake in a preheated oven at medium heat until golden brown.

Once out of the oven, drizzle the warm mhencha with honey, garnishing with almond slices or sesame as desired. Serve warm or at room temperature, ideally with a glass of mint tea, embodying the simplicity and exquisite taste of traditional Moroccan cuisine.
